The How To

This has got to be the best Meatloaf recipe and it's the sauce that makes this dish truly great. A real family pleaser, and the leftovers make amazing sandwiches the next day.

Preheat the oven to 180c

Finely dice the two onions and combine with the rest of the loaf ingredients – Pork mince, sausage meat, egg, curry powder, bread crumbs, fresh parsley, a pinch of salt and pepper, milk and half a cup of water in a bowl making sure they are mixed well.

Cover the bottom of a baking pan with the oil. Shape mixed ingredients in to a loaf, place into the baking pan and bake for 30 minutes.

To prepare the sauce: Combine all the sauce ingredients – milk, butter, tomato sauce (ketchup), coffee, Worcester sauce, malt vinegar, lemon juice, brown sugar and half a cup of water in a pan on the stovetop and bring to the boil. Turn down the heat and let simmer for 5 minutes, then leave to one side.

After 30 minutes remove the Meatloaf from the oven and pour the sauce over the Meat Loaf, return to the oven and bake for a further 50 minutes, basting a couple of times to get the flavor of the sauce into the Meat Loaf.
