The How To

This pork mince stir fry with green beans and basil is quick, easy and super healthy. We love this dish in our home and everyone argues for the left overs!

Wash the rice in cold water and drain. Place rice in a rice cooker or in a pot on the stove top. Cover the Rice with twice as much water and cook until you can taste its cooked and there is no crunch.

Crush and mince the garlic, grate the ginger, thinly slice the spring onion and set aside on a plate. Cut the green beans into threes, chop the peanuts, softly slice the basil and leave to one side.

Heat a wok or a frying pan over a high heat, add 1 table spoon of the sesame oil and heat until starting to smoke. Add half of the pork mince and fry until nicely browned. Remove from the pan, set to one side and repeat with the remaining pork mince and leave to one side with the first half of the mince.

Add 1 tablespoon of sesame oil in the pan, heat and add the garlic, ginger, spring onion and stir fry for 1 minute. Add the pork mince, brown sugar, oyster sauce, soy sauce, water and cook for a further 2 minutes. Add both the green beans and peanuts to the pan and cook for one minute more add half of the basil and serve with cooked rice and sprinkle the remaining basil on top.
