The How To
Chickpeas and chicken is a quick and easy recipe that tastes great. Full of hearty goodness and flavour that the whole family will love. Served with Mashed Potatoes, Rice or Pasta makes this dish a favorite for any busy family.
Preheat the oven to 180c. Combine the flour, salt and pepper on a plate and lightly coat the chicken drumsticks with the flour mix. Put 2 tbsp of oil in a frying pan and bring to a medium to high heat. Cook the chicken in batches until golden brown and then transfer to a large baking dish. Cover the golden brown chicken drumsticks with the drained and rinsed chickpeas cover the pan and leave to one side.
Heat one tbsp of oil in a frying pan. Crush and mince the garlic, dice the onion and cook in the pan until soft. Add the sliced chorizo and cook for a further two minutes. Add the drained diced tomatoes, chicken stock, balsamic vinegar, sugar and a pinch of salt and pepper. Reduce the heat and simmer for ten minutes.
Pour the sauce mix over the chicken drumsticks, stir, cover with a lid or foil and bake for 1 hour, remove cover, sprinkle with the feta cheese and return uncovered to the oven for 15 minutes. Serve with pasta or rice or mash potatoes.
*if you want you can add more veg like grated carrot and courgette with the onions
