The How To

Beef mince burritos are a quick tasty meal for the whole family. You can add your own combinations of salad condiments and children love to wrap them up themselves.

Place a frypan or pot on the stovetop add the oil and heat on medium. Add the beef mince and cook, while stirring until brown. Next add the diced onion, tomato paste, garlic, paprika, ground cumin and the chilli powder and continue to cook until the onion is soft. Next add the tinned tomatoes, half the grated carrot and the grated courgette and continue to cook for a further 8 minutes on a low heat. Add the salt, pepper and oregano.

Take the tortillas and lightly heat in the oven or microwave to make them soft. To serve place a nice lettuce leaf in the middle of a tortilla, place a mound of the beef mix on top, sprinkle with grated carrot and cheese, fold the tortilla over to make a parcel with one end still open and enjoy.

If you like you can add other garnishes, such as: a dollop of sour cream or slices of avocado, sliced tomato, sliced cucumber, the list goes on.
