The How To

Quick, easy and full of flavour makes this sandwich great. Pan fried Scotch Fillet, mushroom and fried onions gives this sandwich loads of taste.

Add 2 tablespoons of oil to a frying pan and heat on high. Put the sliced onions and mushrooms into the hot oil and fry for 5 minutes until well cooked controlling the heat so not to burn. Once cooked remove from the pan into a bowl, cover and leave to one side.

Return the pan to the stove top, add the remaining oil and heat nice and hot. Take the scotch fillets and sprinkle with salt and pepper. Place into the pan and cook for two minutes on both sides for medium rare. Remove from the pan and leave to rest for 4 minutes.

Take the sourdough loaf and slice into sandwich pieces. Add butter or mayo if you like. Take the rested steak and slice thinly evenly disseminate between your bread, cover with fried onion and mushroom mix and enjoy.
